Patacon WITH hogao And quesito
INGREDIENTS
(For 10 tostones)
10 Cripples pisaos green
FOR hogao
4 tablespoons oil
1 cup scallions
finely chopped.
1 clove garlic, crushed
1 1/2 cup ripe tomato
chopped
1 cup shredded cheese
sprinkled salt
Color (optional)
PREPARATION
In hot oil saute onion and garlic for a couple of minutes, add the tomatoes and cook over medium heat for 8 minutes, add salt and color. Salt can be replaced by a bucket of crumbled broth. This sauce can be made ahead, refrigerate and heat before serving.
On each pisao patacón put a portion of hogao and top with shredded cheese.
